I’m not a vegetarian, but I am trying to incorporate more veggies into my diet. Here’s a recipe for veggie lasagna that’s SO delicious, you won’t even miss the meat. Yes, there is a LOT of gooey cheese in it, so it’s not exactly low-fat, but there are lots of veggies, so I can at least pretend that it’s healthy. LOL!

A really great thing about lasagna is that you can actually make it a day ahead, stick it in fridge, and then wait to bake it the next day. This recipe uses canned pasta sauce, and I LOVE Hy-Vee’s Extra Chunky Garden Vegetable pasta sauce. Bonus, it’s so economical! I found it on sale at Hy-Vee for only $1.47 a jar!
