I tried that viral “Cutie Cake” recipe!

I tried making that “Cutie Cake” recipe that’s all over the internet. If you haven’t heard about it, you start by preparing a box cake recipe according to the directions.  (I used basic yellow cake.)

I shop at Hy-Vee, and always buy these eggs there because they’re from a family farm in Iowa, they’re always really fresh, AND I’m a sucker for the cute little handwritten notes they put inside the cartons.

But back to the recipe….

Once you’ve prepared the cake batter, you simply spray Pam in a cake pan, spread parchment paper over the bottom, sprinkle a thin layer of granulated sugar, then place Cutie oranges, halved, on top of the sugar. Pour the cake batter over the oranges and then bake according to the recipe on the cake box.

Here’s how the cake came out.  Very moist and flavorful, and I flipped it upside down and served it that way, much like you would a pineapple upside down cake.

Here’s what I would do differently with this recipe:

Instead of arranging the cutie oranges in HALVES, I think it would work much batter to pull them apart into individual slices, pull off any pith you see and arrange in a single layer on top the sugar and parchment paper.

It’s a fun cake to make, and easy!
