I don’t typically think of making pasta salad in the winter, but I’ve been trying to eat a little healthier for the new year, and for some reason a crunchy, veggie pasta salad sounded really good. Found everything I needed at Hy-Vee, and also picked up a loaf of their crusty fresh Italian bread from the bakery to go along with the salad. Hy-Vee has a handy app that makes shopping really easy. When I make pasta salad, I go with a basic recipe, but sometimes add in any veggies I have on hand. So, to this recipe, I added some chopped carrots. One more tip, I always add the juice of two fresh lemons to my dressing when I make it. I gives the pasta salad a really zippy, fresh flavor. I like to use bow-tie pasta because it seems to have a firmer texture.
