Cheryl Kaye's Kitchen: Summer's End Veggie Pizza

This time of year, I try to eat as much local produce as I can, because I know the season is short-lived.  I eat tons of salads, but sometimes I look for other ways to enjoy fresh veggies.  This pizza is SUPER EASY and delicious!

RECIPE:

1 pre-made pizza crust 

1 can pizza sauce

1 and a half cups Kale, cleaned and chopped

1 yellow pepper, diced

1 red pepper, diced

3 - 5 Roma tomatoes, sliced thin

1/4 cup chopped red onion

1 cup shredded carrots

Optional:  1 cup shredded Parmesan cheese (I actually skip the cheese sometimes.)

Preheat oven to 400.  Spread a thin layer of pizza sauce on the crust.  Layer on in this order: Kale, onions, peppers, carrots and then tomato slices on top.  Sprinkle on the cheese as the last layer if you choose to use it. Bake pizza directly on oven rack for 10-14 minutes.  (Keep your eye on it.)  Enjoy!
